Summum

What they make
- Summum was incorporated in Utah in 1975 as a nonprofit that teaches its philosophy, and it received the first wine manufacturing license Utah issued, in 1981.[3][1][4]
- Its nectars are made inside the pyramid from what Summum describes as an ancient pre-Egyptian formula: they rest for 77 days, then age for one to fifteen years.[2][1]
- Summum calls each nectar a "publication" because, in its teaching, the wine carries spiritual concepts; it says it has made nine of a planned 27.[2]
- The nectars are meant as a sacrament for Summum's meditation practice, with a small amount drunk just before meditating.[2]

Bottles to go
- There is nothing to buy: Summum told the Tribune it does not sell wine and may use it only in its religious practice.[1]
- Summum says the nectars are available only to people who have learned its beginning meditation.[2]
Utah lets a brewery, winery or distillery sell its own packaged products on site through a “Type 5” package agency[5]; anything else comes from a state liquor store.
What locals say
- The Salt Lake Tribune looked into why a pyramid in the Poplar Grove neighborhood holds a wine license, and explained it as a religious sacrament, much as other faiths use wine.[1]
