What they make
- When Monster Beverage bought the Squatters and Wasatch beer brands in 2022, the restaurants and brewpubs were left out; a local group led by Squatters founders Peter Cole and Jeff Polychronis then bought Salt Lake Brewing Co., the company that runs them.[1]
- Under that deal the pubs kept pouring Squatters and Wasatch beers, buying them from Monster.[1]
- In March 2023 the company took over the 10-barrel brewhouse next to the downtown pub and brought back longtime Squatters brewmaster Jason Stock; his first beer for Salt Lake Brewing Co. was Dog Lake Pale Ale.[2][4]
- By late 2025 the pubs poured in-house beers by Stock and by Nils Imboden, alongside popular beers from the Squatters and Wasatch lineup.[3]
- The Squatters Craft Beers and Wasatch Brewery brands still belong to Monster, which closed their Salt Lake City brewery in May 2025 and moved production to its other breweries; the pubs, a separate company, were not affected.[5]
Visiting
- In late 2025 the company put all its locations, including the former Wasatch brewpubs, under one name: Squatters Pubs.[3]
- The downtown pub opened in 1989 as Salt Lake City's first brewpub, and guests can watch beer being brewed.[6]
- Other Squatters Pubs are in Sugar House (the former Wasatch brewpub on Highland Drive), West Valley City (opened in 2025 as Squatters Corner Pub), the Roadhouse in Park City, the Craft Café near the airport, and Concourses A and B at Salt Lake City International Airport.[7][1][8]
- The Top of Main brew pub on Park City's Main Street, where Wasatch opened in 1986, closed for good in spring 2026 as the building's owner moved to sell it.[9]
Bottles to go
- After the 2022 sale the pubs stopped selling beer to go, because a brewery package agency requires brewing on site and the brewing had gone to Monster.[10]
- DABS lists a beer manufacturing license and a package agency for the company at the downtown pub since February 2023, plus an off-premise beer retailer license there; we couldn't confirm what it sells to go.[11]
Utah lets a brewery, winery or distillery sell its own packaged products on site through a “Type 5” package agency[14]; anything else comes from a state liquor store.
What locals say
- City Weekly readers voted Squatters Pub Brewery the best brewery food of 2025 and second-best brewpub.[12]
Summarized in our words from local press and reader polls. We don't copy reviews.
